Carrot Cake

2 cups - sugar
4 - eggs
2 cups - self rising flour
1 1/2 cups - wesson oil
1 cup - chopped pecans
1 cup - raisins
1 tsp. - ground cinnamon
3 1/2 cups grated carrots


Preheat oven to 350....Grease and flour 3 cake pans. Mix sugar, oil, eggs,
flour,
pecans, raisins and cinnamon. Stir in grated carrots. Mix well, pour into
pans. Cook for 1 hour or until toothpick comes out clean. Let cool and
remove from pans.


CREAM CHEESE ICING:

1 box - powdered sugar
3 oz. - cream cheese (softened)
1 stick - butter
1/2 cup - nuts

Mix with mixer.....powdered sugar, cream cheese, and butter.
Fold in nuts. (a small amount of milk may be added if icing is too thick).
Spread on cool cake
