Yellow Pudding Cake
mix
1 C. Apple Cider (can use juice)
1/3 C. Oil
1/2 Tsp. Rum extract
3 Eggs
2-1/2 Tsp. Cinnamon
1/4 Tsp. Nutmeg
1/2 C. Apple flavoured yogurt
1-21 oz. can Apple Pie filling
1/4 C. Chopped Nuts Topping:
3 T. and 1 Tsp. Apple Cider
1 C. and 2 T. Confectioners sugar
1/4 C. Chopped Nuts
1/8 Tsp. Cinnamon
Preheat oven to 350. Mix all cake ingredients EXCEPT nuts at low speed. Beat 2 minutes @ highest speed. Stir in nuts. Pour into non-stick pan. Bake approx. 55 minutes. Mix topping glaze (excluding nuts) Spoon over cooled cake. Cover top of cake with nuts. Drizzle rest of the glaze over nuts ontop of cake, this "sets" the nuts. Voila!!
