4 tbsp. butter
4 rounded tbsp. of all purpose flour
1 tsp.salt pepper (you decide)
1 1/2 cups milk approximately
4 potatoes, peeled and thinly sliced
2 cups (or more) shredded cheddar cheese
Preheat your oven to 375. In a 2 quart casserole dish arrange the first layer of potatoes. Over a medium heat melt butter then stir in flour, salt and pepper to create a roux. Using a whisk works best. Cook this for a little under a minute. Gradually stir in milk until the mixture thickens, while stirring constantly. Pull the pan off the heat when done. Pour half the sauce over the first layer of potatoes followed by half of the cheese. Arrange the second layer of potatoes,cover w/ remaining sauce and cheese. Bake, cover for about 45 minutes, then remove cover and bake for another 15 minutes or until those potatoes are tender.
